If it’s a bad day for me, if I’m busy at the moment, if I’m anxious about that table still to be cleared or if I forgot to restock the buffet.
The time to say GOOD MORNING to those entering the breakfast room must always be found, never thinking that there’s something more important to do at that moment.
That’s what’s waiting for me.
When this year we decided to change the organizational structure for breakfast and dinner service, forming 2 teams instead of one that split into two shifts, we tried to put this word before every discussion.
That’s why we chose Katia, Jeanne Blue, Karina, and a few days ago, Sara. They seemed, first of all, available girls. Well disposed to WELCOME.
Another magical word.
Some small changes then followed accordingly. We got rid of the automatic coffee machines. Before, we served the guests at the table, certainly more elegant, but this meant keeping 2 eyes and a smile (and 2 useful hands!) practically always in the kitchen.
Today they are on the new extension of the central buffet. Another novelty, in this case to please the aesthetics. For a few years, we had a couple of separate “islands” with fruit juices or mineral water, for example, but they were tables with tablecloths. A makeshift solution, let’s say.
THEN APRIL FINALLY ARRIVED
Lots of chatter, ideas, and “revolutions” but then the more you prepare, do, and undo, the more performance anxiety rises.
We were terrified to start, literally.
Instead, it went well RIGHT AWAY.
The girls are cheerful, every passing day more and more in control of all the things to do. The first guests went home happy, they said they found a rich breakfast, they met a friendly staff.
Some weight has lifted off our shoulders, we admit it. We are aware that we are only at the beginning, that we still have many things to improve (the quality of the coffee, for example!). The room has its flaws and we haven’t found any magic wand to make them disappear.
But for now, not even a GOOD MORNING has escaped us.
